Beef Barley Stew

I have stated before that I am not a huge fan of the slow cooker.  But I do think it is at times necessary and can be quite helpful.  This week, since I have to not only be at work subbing but with the girls’ after school activities and Matt’s busy schedule  it is a welcome friend.  I have given in to the practicality of a meal cooked for us while we are living it up (that was my sarcastic tone!)

Beef Barley Stew.  (note I guess the most popular idea is Beef Barley soup but you know me….I like to change it up!)

Beef Barley Stew

Ingredients:

1 pound stew beef

1 cup all-purpose flour

salt and pepper

2 cups turnip (peeled and cubed 1-inch)

3 carrots peeled and diced (1-inch pieces)

1 cup frozen pearl onions (or regular diced onions)

1 celery rib diced (1-inch pieces)

4 garlic cloves crushed and diced

1 bay leaf

1 tablespoon dried oregano

1 teaspoon celery salt

3/4 cup barley (not quick cook)

1 cup ref wine

3 cups beef broth (low sodium)

How to:

In your slow cooker put your turnip, carrots, onions, garlic and celery.  Toss to mix the vegetables.  Add your bay leaf.

In a large bowl put your flour and season with salt and pepper.   Working with half of your beef, put in your flour and stir to coat well.  In a large pan heat 1 tablespoon olive oil and butter.  Brown your meat, making sure not to overcrowd your pan.  Place your browned meat in your slow cooker.   Take 1 cup of beef broth and add to your hot pan, using a wooden spoon carefully scrape the bottom of your pan loosening up all the beautiful bits of flavor.  Sprinkle your oregano and celery salt over your meat.  Next, top your meat with your barley.  Combine your wine, 1 cup of beef broth from your pan and the remaining 2 cups beef broth, pour over your meat and vegetables.  Cook on low for 4-5 hours.  I like to keep 1 cup of water or beef broth next to my slow cooker in case things go crazy and the slow cooker is drying things up.  Serve with a nice crusty bread, sprinkled with crushed red pepper or a little freshly ground black pepper.
