Some of you may have read my post about Roasted Cherries and Brown Butter Frozen Yogurt. I still stand by the fact that it was one of the most delicious thing I have ever eaten. I don’t know if the stars and the moon were aligned just right but darn it that was a good treat! I am still dreaming up new combinations of flavors with this extremely easy and “better for you than ice cream” treat!

BUT…in the original post I did talk about roasting 2 bags of cherries. So here is the second attempt. I went a little off the beaten path on this one. Savory Roasted Cherries Appetizer Bites with Brie and Toasted French Baguette. Verdict: DELICIOUS as well!
Ingredients:
1 12-ounce bag frozen cherries (about 2 cups)
3 tablespoons sugar
1/2 teaspoon salt (kosher or sea salt is best)
1/2 teaspoon fresh ground pepper
1/2 teaspoon fresh rosemary finely chopped
1/2 teaspoon fresh thyme finely chopped
1 wheel of brie
1 french baguette thinly sliced and lightly toasted
How to:
Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper or Silpat. Set aside.
In a medium bowl combine your cherries with your sugar, salt, pepper, rosemary and thyme. Toss well and put in your prepared pan. Roast in your oven for 30 minutes. Put your roasted cherries in a small bowl to cool completely at room temperature. You can make this ahead of time but be sure to bring back to room temperature before serving.
When ready to serve, simply put your brie (also at room temperature for best taste), roasted cherries and sliced toasted bread on a serving tray and let the fun begin…or people help themselves
Simple, easy, beautiful presentation and delicious…I love that in an appetizer…oh yeah a nice glass of wine would be lovely with this little marvel!
